Ok WCJ...I promised you the recipe...

 

One-Pan Paprika Chicken With Lentils, Squash and Daqa

 

Yield: 6 servings

 

INGREDIENTS

6 bone-in, skin-on chicken thighs (about 2¼ pounds)

¾ pound skin-on kabocha squash, seeds removed, cut into about 6 (1-inch-thick) wedges

1 tablespoon plus 2 teaspoons ground sweet paprika

3 tablespoons olive oil

Fine sea salt

2 small yellow onions, halved and thinly sliced

3 garlic cloves, minced

1 teaspoon cumin seeds, lightly toasted

8 ounces/1 heaping cup (uncooked) French green lentils, rinsed

2 cups chicken stock

¾ cup sour cream

¼ cup finely chopped chives

3 tablespoons finely chopped fresh dill, plus 1 tablespoon picked leaves for serving

3 tablespoons apple cider vinegar

½ teaspoon granulated sugar

 

PREPARATION

Step 1

Heat the oven to 450 degrees.

 

Step 2

In a large bowl, mix together the chicken, squash, 1 tablespoon paprika, 1 tablespoon oil and 1 teaspoon salt; set aside.

 

Step 3

Place the onions, 2 garlic cloves, ½ teaspoon cumin, 1 teaspoon salt and the remaining 2 tablespoons oil and 2 teaspoons paprika in a 9-by-13-inch baking dish and mix to combine. Roast for 10 minutes, stirring halfway, until the onions are lightly colored. Stir in the lentils and chicken stock. Arrange the squash wedges and the chicken, skin-side up, on top and roast for another 20 minutes, until the chicken skin is deeply golden. Turn the oven down to 350 degrees and cook for another 40 minutes, or until the chicken is cooked through and the squash is nicely softened.

 

Step 4

Meanwhile, in a small bowl, combine the sour cream, chives and dill; set aside.

 

Step 5

To make the daqa, mix the remaining garlic and cumin with the vinegar, sugar, ¼ teaspoon salt and 2 tablespoons of water.

 

Step 6

When ready, remove the bake from the oven and top with spoonfuls of the sour cream mixture. Pour over the daqa and sprinkle with the extra dill. Serve hot, straight out of the baking dish.

WCJ...another one pan roasted chicken recipe that has become my go to easy dinner...

 

One-Pan Crispy Chicken and Chickpeas

 

Yield: 2 servings

 

INGREDIENTS

4 bone-in, skin-on chicken thighs (about 1¾ pounds)

Kosher salt and pepper

2 teaspoons olive oil, plus more as needed

1 (15-ounce) can of chickpeas, rinsed

4 large garlic cloves, thinly sliced

2 (packed) cups or 1/2 (5-ounce) package baby spinach

1 large lemon, halved

Yogurt and hot sauce (both optional), for serving

 

Step 1

Heat oven to 400 degrees with a rack in the center.

 

Step 2

Pat the chicken dry and season both sides with salt and pepper. Heat 2 teaspoons of olive oil in a large cast-iron skillet over medium-high heat. Put the chicken thighs in the skillet, skin-side down, and cook for 4 to 5 minutes, until light golden brown. Flip and cook for 2 more minutes. Transfer the chicken to a plate.

 

Step 3

Add the chickpeas and garlic to the skillet and stir to coat in the oil and juices. If the pan seems at all dry, drizzle in a bit of olive oil. Season with salt and pepper.

 

Step 4

Place the chicken on top of the chickpeas, skin side up, in an even layer and transfer the pan to the oven. Bake for 30 minutes or until the chicken is deeply golden and cooked through.

 

Step 5

Remove the chicken to a clean plate, put the pan back on the stovetop over medium heat and add the spinach to the chickpeas in the pan, one handful at a time, stirring it until just wilted. Add the chicken back to the pan and squeeze a lemon half over the top; cut the remaining lemon half into 4 wedges. Serve the chicken, chickpeas and spinach with the lemon wedges on the side, and yogurt and hot sauce for serving, if you like.

Did you build an outdoor pizza oven?

Nah, but our new oven goes up to 550 so with the pizza stones it does a great job. Came out really crispy. We'll give it another go this weekend

Agree with this! I used to work for Caltech (20 years ago) and the cafeteria had a wood burning pizza oven. Pizza's were very cheap, I think $4 for a nice size pizza. They were always abstract shaped, oval-ish. One of my co-workers asked if they could make it round and they rudely replied, NO!

 

My wife usually makes them detroit style in a rectangle pan so you don't have to deal with shape.
